Issue124(R)1Standard2.2.1STANDARD2.2.1MEATANDMEATPRODUCTSPurposeThisStandardincludesdefinitions,compositionalrequirementsandlabellingrequirementsformeatandmeatproducts.Processingrequirementsforprocessedmeatproducts,includingfermentedcomminutedmeatproductsarecontainedinStandard1.6.2.TheAgricultureandResourceManagementCouncilofAustraliaandNewZealand(ARMCANZ)prescribemandatorystandardsinAustralia,butnotNewZealand,thatcontrolthehygienicslaughterofanimalsforhumanconsumption.TableofProvisionsDivision1–Interpretation1InterpretationDivision2–Compositionalrequirements2Deleted3CompositionofsausageDivision3–InformationRequirements4Declarationofthepresenceofoffalinfood5Mandatoryfatdeclarationwhereareferenceismadetothefatcontentofmincedmeat6Informationrequiredinrelationtorawmeatjoinedorformedintothesemblanceofacutofmeat7Deleted8Labellingoffermentedcomminutedprocessedmeat9Labellingoffermentedcomminutedmanufacturedmeat10Unpackagedfermentedcomminutedmanufacturedmeatandfermentedcomminutedprocessedmeatproducts11MeatandmeatproductsmustbederivedfromcattlefreefrombovinespongiformencephalopathyClausesDivision1–Interpretation1InterpretationInthisCode–curedand/ordriedmeatfleshinwholecutsorpiecesmeansmeatfleshincludinganyattachedbonecontainingnolessthan160g/kgmeatproteinonafatfreebasis.manufacturedmeatmeansprocessedmeatcontainingnolessthan660g/kgofmeat.meatmeansthewholeorpartofthecarcassofanybuffalo,camel,cattle,deer,goat,hare,pig,poultry,rabbitorsheep,slaughteredotherthaninawildstate,butdoesnotinclude–(a)thewholeorpartofthecarcassofanyotheranimalunlesspermittedforhumanconsumptionunderalawofaState,TerritoryorNewZealand;or(b)avianeggs,orfoetusesorpartoffoetuses.meatfleshmeanstheskeletalmuscleofanyslaughteredanimal,andanyattached–FederalRegisterofLegislativeInstrumentsF2012C00286Issue124(R)2Standard2.2.1(a)animalrind;and(b)fat;and(c)connectivetissue;and(d)nerve;and(e)blood;and(f)bloodvessels;and(g)skin,inthecaseofpoultry.meatpiemeansapiecontainingnolessthan250g/kgofmeatflesh.offalmeansthosepartsofthecarcasssuchasblood,brain,heart,kidney,liver,pancreas,spleen,thymus,tongueandtripe,butexcludesmeatflesh,boneandbonemarrow.processedmeatmeansameatproductcontainingnolessthan300g/kgmeat,wheremeateithersinglyorincombinationwithotheringredientsoradditives,hasundergoneamethodofprocessingotherthanboning,slicing,dicing,mincingorfreezing,andincludesmanufacturedmeatandcuredand/ordriedmeatfleshinwholecutsorpieces.sausagemeansmeatthatisminced,orcomminutedmeatoracombinationthereof,whichmaybecombinedwithotherfoods,encasedorformedintodiscreteunits,butdoesnotincludemeatformedorjoinedintothesemblanceofcutsofmeat.Division2–Compositionalrequirements2Deleted3CompositionofsausageSausagemustcontain–(a)nolessthan500g/kgoffatfreemeatflesh;and(b)theproportionoffatinsausagemustbenomorethan500g/kgofthefatfreemeatfleshcontent.Division3–InformationRequirements4Declarationofthepresenceofoffalinfood(1)Thepresenceofoffalinafoodmustbe–(a)declaredinthestatementofingredients;or(b)wherethefoodisnotrequiredtobearalabel,otherwisedeclaredtothepurchaser.(2)Thepresenceofbrain,heart,kidney,liver,tongueortripeinafoodmustbedeclaredas‘offal’orbythespecificnameofthetypeofoffal.(3)Thepresenceofanyothertypeofoffalinafoodmustbedeclaredbythespecificnameofthetypeofoffal.5MandatoryfatdeclarationwhereareferenceismadetothefatcontentofmincedmeatWhereexpressorimpliedreferenceismadeinrelationtothefatcontentofmincedmeat,themaximumproportionoffatinthemincedmeat,expresseding/100g,mustbe–(a)declaredonthelabelonpackageofthefood;or(b)wherethefoodisnotrequiredtobearalabel–FederalRegisterofLegislativeInstrumentsF2012C00286Issue124(R)3Standard2.2.1(i)displayedonorinconnectionwiththedisplayofthefood;or(ii)providedtothepurchaseruponrequest.6InformationrequiredinrelationtorawmeatjoinedorformedintothesemblanceofacutofmeatWhererawmeatwhichhasbeenformedorjoinedinthesemblanceofacutofmeatusingabindingsystemwithouttheapplicationofheat,whethercoatedornot,adeclarationthatthemeatiseitherformedorjoined,inconjunctionwithcookinginstructionsindicatinghowthemicrobiologicalsafetyoftheproductcanbeachieved–(a)mustbeincludedinthelabel;or(b)ifthefoodisnotrequiredtobelabelled,mustbeprovidedtothepurchaser.7Deleted8Labellingoffermentedcomminutedprocessedmeat(1)Thefollowingnamesareprescribedforfermentedcomminutedprocessedmeat–(a)inthecaseoffermentedcomminutedprocessedmeatwhichhasnotbeenheattreatedorcooked–‘fermentedprocessedmeat–notheattreated’;and(b)inthecaseoffermentedcomminutedprocessedmeatwhichhasbeenheattreated–‘fermentedprocessedmeat–heattreated’;and(c)inthecaseoffermentedcomminutedprocessedmeatwhichhasbeencooked–‘fermentedprocessedmeat–cooked’.(2)Ifthelabelonapackagecontainingfermentedcomminutedprocessedmeathasatradename,thattradenamemusthaveinassociationtherewith,thefollowingwordorwords–(a)inthecaseoffermentedcomminutedprocessedmeatwhichhasnotbeenheattreatedorcooked–‘fermented’;(b)inthecaseoffermentedcomminutedprocessedmeatwhichhasbeenheattreated–‘fermentedheattreated’;and(c)inthecaseoffermentedcomminutedprocessedmeatwhi
