STANDARDFORQUICKFROZENSTRAWBERRIESCXS52-1981*Adoptedin1981.Amendedin2019.*FormerlyCAC/RS52-1971.CXS52-198121.SCOPEThisstandardshallapplytoquickfrozenstrawberries(excludingquickfrozenstrawberrypuree)ofthespeciesFragariagrandifloraL.andFragariavescaL.asdefinedbelowandofferedfordirectconsumptionwithoutfurtherprocessing,exceptforsizegradingorrepackingifrequired.Itdoesnotapplytotheproductwhenindicatedasintendedforfurtherprocessingorforotherindustrialpurposes.2.DESCRIPTION2.1ProductDefinitionQuickfrozenstrawberriesaretheproductpreparedfromfresh,clean,sound,ripeandstemmedstrawberriesoffirmtextureconformingtothecharacteristicsofFragariagrandifloraL.orFragariavescaL.2.2ProcessDefinitionQuickfrozenstrawberriesistheproductsubjectedtoafreezingprocessinappropriateequipmentandcomplyingwiththeconditionslaiddownhereafter.Thisfreezingoperationshallbecarriedoutinsuchawaythattherangeoftemperatureofmaximumcrystallizationispassedquickly.Thequickfreezingprocessshallnotberegardedascompleteunlessanduntiltheproducttemperaturehasreached-18C(0F)atthethermalcentreafterthermalstabilization.Therecognizedpracticeofrepackingquickfrozenproductsundercontrolledconditionsispermitted.2.3HandlingPracticeTheproductshallbehandledundersuchconditionsaswillmaintainthequalityduringtransportation,storageanddistributionuptoandincludingthetimeoffinalsale.Itisrecommendedthatduringstorage,transportation,distributionandretail,theproductbehandledinaccordancewiththeprovisionsintheCodeofPracticefortheProcessingandHandlingofQuickFrozenFoods(CXC8-1976).2.4Presentation2.4.1Style(a)Quickfrozenstrawberriesshallbepresentedaswhole,halved,slicedorcut.(b)Quickfrozenstrawberriesmaybepresentedasfree-flowing(i.e.asindividualberriesnotadheringtooneanother)ornonfree-flowing(i.e.asasolidblock).(c)OtherStylesAnyotherpresentationoftheproductshallbepermittedprovidedthatit:(i)issufficientlydistinctivefromotherformsofpresentationlaiddowninthisstandard;(ii)meetsallotherrequirementsofthisstandard;(iii)isadequatelydescribedonthelabeltoavoidconfusingormisleadingtheconsumer.2.4.2Sizing(a)Wholestrawberriesmaybepresentedassizedorunsized.(b)Ifwholestrawberriesaresizegradedtheyshallbereasonablyuniformwithineachpackagesuchthatthediameterofthelargestberrydoesnotexceedthediameterofthesmallestberrybymorethan10mm,measuredaccordingtothemaximumdiameter.(c)InthecaseofFragariagrandifloraL.themaximumdiameterofeachberrywhethersizedorunsizedshallnotbelessthan15mm.3.ESSENTIALCOMPOSITIONANDQUALITYFACTORS3.1OptionalIngredientsSugars(sucrose,invertsugar,dextrose,fructose,glucosesyrup,driedglucosesyrup).3.2Composition3.2.1Strawberriespreparedwithdrysugars:Thetotalsolublesolidscontentoftheliquidextractedfromthethawed,comminutedsampleshallbenotmorethan35%m/mnorlessthan18%m/mexpressedassucrose,asdeterminedbyrefractometerat20C.3.2.2Strawberriespreparedwithsyrup:Theamountofsyrupusedshallbenotmorethanthatrequiredtocovertheberriesandfillthespacesbetweenthem.Thetotalsolublesolidscontentoftheliquidextractedfromthethawed,comminutedsampleshallbenotmorethan25%m/mnorlessthan15%m/mexpressedassucrose,asdeterminedbyrefractometerat20C.CXS52-198133.3QualityFactors3.3.1OrganolepticandothercharacteristicsQuickfrozenstrawberriesshallbe:(a)ofgoodcolour;(b)freefromforeignflavourandodour;(c)intact,ifwhole,andnotmateriallydisintegrated;(d)intact,ifhalved,slicedorcutandnotseriouslyaffectedbydisintegratedfruit;(e)clean,practicallyfreefromsandandgritandfreefromotherforeignmaterial;(f)practicallyfreefromstalks,partsofstalks,calyces,leavesandotherextraneousvegetablematerial;(g)sound,practicallyfreefrommould,insectbitesandotherblemishes;(h)normallydeveloped;(i)ofsimilarvarietalcharacteristicsineachpackage;(j)whenpresentedasfree-flowing,practicallyfreefromberriesadheringtooneanother(whole,halved,slicedorcut),whichcannotbeeasilyseparatedbyhandwithoutdamagewheninafrozenstate;noticy.3.3.2AnalyticalcharacteristicsMineralimpuritiessuchassandnotmorethan0.1%m/monawholeproductbasis.3.4DefinitionofDefects3.4.1Partiallyuncoloured-25%-75%oftheoutersurfaceareawithoutthecolourcharacteristicofthevariety3.4.2Completelyuncoloured-75%ormoreoftheothersurfaceareawithoutthecolourcharacteristicofthevariety3.4.3Disintegrated-broken,crushedorsmashed3.4.4Stalksorpartsofstalks-ifeachgreaterthan3mminonedimension3.4.5Blemished-showingvisiblesignsofpestattackorpathologicalorphysicalinjury3.4.6Misshapen-notnormallydevelopedandmoreinparticularcontaininghardpartsinthefruitflesh3.5TolerancesforDefects3.5.1Basedonasampleunitof500gthedrainedfruitingredientoftheproductasdefinedinparagraph3.5.2(a)shallhavenotmorethanthefollowing:(a)stalksorpartsofstalkseachgreaterthan3mminonedimension3bynumber(b)calyces3cm²(c)otherextraneousvegetablematerial3cm²(d)completelyuncolouredwholeberries1bynumber(e)partiallyuncolouredwholeberries5%m/m(f)disintegratedwholeberries5%m/m(g)blemished5%m/m(h)misshapenwholeberries2%m/m(i)dissimilarvarieties6%m/m3.5.2DrainedFruitIngredient(a)Thedrainedfruitingredientisdeterminedbythawingtheproductuntilitispracticallyfreefromicecrystalsandthendrainin
