Issue1241Standard2.2.2STANDARD2.2.2EGGANDEGGPRODUCTSPurposeThisStandardprovidesdefinitionsandrequirementsforeggandeggproducts.ProcessingrequirementsforeggproductsandrequirementsrelatingtothesaleofcrackedeggsareincludedinthisStandardandStandard1.6.2.TableofProvisions1Interpretation2Processingofeggproducts3SaleofcrackedeggsClauses1InterpretationInthisCode–eggmeansthereproductivebodyinshellsobtainedfromanyavianspecies,theshellbeingfreefromvisiblecracks,faecalmatter,soilorotherforeignmatter.eggproductsmeansthecontentofegg,aspartorwhole,inliquid,frozenordriedform.visiblecracksincludescracksvisiblebycandling.2Processingofeggproducts(1)Subjecttosubclause(2),eggproductsmustbepasteurisedorundergoanequivalenttreatmentsothattheeggproductmeetsthemicrobiologicalcriteriaspecifiedinStandard1.6.1.(2)Subclause(1)doesnotapplytothenon-retailsaleofeggproductsusedinafoodwhichispasteurisedorundergoesanequivalenttreatmentsothattheeggproductusedinthefoodmeetsthemicrobiologicalcriteriaspecifiedinStandard1.6.1.3Saleofcrackedeggs(1)Crackedeggsmustnotbemadeavailableforretailsaleorforcateringpurposes.(2)Eggproductsderivedfromcrackedeggssold-(a)notforretailsale;or(b)notforcateringpurposes;mustbepasteurisedorhaveundergoneanequivalenttreatmentsothattheeggproductmeetsthemicrobiologicalcriteriaspecifiedinStandard1.6.1.EditorialNote:Standard1.2.3requiresunpasteurisedeggandeggproductstobelabelledwithanadvisorystatementthattheproductisunpasteurised.FederalRegisterofLegislativeInstrumentsF2011C00576Issue1242Standard2.2.2{THISPAGEINTENTIONALLYLEFTBLANK}FederalRegisterofLegislativeInstrumentsF2011C00576
