GUIDELINESFORTHECONTROLOFTRICHINELLASPP.INMEATOFSUIDAECAC/GL86-2015Adoptedin2015.CAC/GL86-201521.INTRODUCTIONTrichinellosisisaparasiticdiseaseofmajorpublichealthandeconomicimportanceinsomecountries.Humaninfectionoccursfromtheconsumptionofraworundercookedmeatofmanyspecies(e.g.domesticpig,horse,game)containinginfectiveTrichinellaspp.larvae.MeatfromanimalsofthefamilyofSuidae(furtherreferredtoasSuidae)isconsideredtobethemostimportantmeansoftransmissionofTrichinellaspp.tohumans.Theinfectionstatusofdomesticpigpopulationsisinformedbyknowledgeofmanagementpracticesanddatafrommonitoringprogramsforlive(serologicalsurvey)orslaughteredpigs.HumanhealthdatacanalsobeusedtosupportthedeterminationofriskofexposuretoTrichinellaspp.Post-slaughtercontrolmeasurestoprotectconsumersfromexposuretoTrichinellaspp.inthemeatofSuidaeshouldberisk-based.TheseGuidelinesincorporateelementsofthe“riskmanagementframework”(RMF)approachasdevelopedbytheCodexCommitteeonFoodHygieneformanagingmicrobiologicalhazards(PrinciplesandGuidelinesfortheConductofMicrobiologicalRiskManagement(CAC/GL63-2007))suchas:Preliminaryriskmanagementactivities;Identificationandselectionofriskmanagementoptions;Implementationofcontrolmeasures;Monitoringandreview.2.OBJECTIVESTheprimaryobjectiveoftheseGuidelinesistoprovideguidancetogovernmentsandindustryonrisk-basedcontrolmeasurestopreventexposureofhumanstoTrichinellaspp.inmeatofSuidae.TheGuidelinesprovideaconsistentandtransparenttechnicalbasisforreviewingandimplementingcontrolmeasuresbasedonepidemiologicalinformationandriskanalysis.Therisk-basedcontrolmeasuresthatareselectedvarybetweencountriesandproductionsystems.Measuresappliedatthenationallevelshouldbetakenintoaccountinthejudgementofequivalence1byimportingcountries,therebyfacilitatinginternationaltrade.3.SCOPEANDUSEOFTHEGUIDELINES3.1.ScopeTheseGuidelinesaddressonlythecontrolofTrichinellaspp.inmeatfromSuidaeasthisisconsideredthemostimportantsourceofinfectionofhumans.ThecontrolofTrichinellaspp.inmeatfromotherspecies(e.g.horses,bears,walrus,etc.)shouldhoweverbetakenintoaccountwhereconsideredrelevanttothecontrolofTrichinellaspp.inmeatfromSuidae.TheseGuidelinesapplytothecontrolofallspeciesandgenotypesofTrichinellathatmayinfectSuidaeandcausefoodbornedisease.TheGuidelinesarebasedontheWorkingPrinciplesforRiskAnalysisforApplicationintheFrameworkoftheCodexAlimentarius2andtheCodeofHygienicPracticeforMeat(CAC/RCP58-2005)thatprovidesgenericadviceonarisk-basedapproachtomeathygiene.TheseGuidelinesusedinconjunctionwiththeOIErecommendations(Chapter8.15InfectionwithTrichinellaspp.oftheOIETerrestrialAnimalHealthCode),applytoallstepsfromprimaryproductiontoconsumption.3.2.UseTheseGuidelines,usedinconjunctionwiththeOIErecommendations(Chapter8.15InfectionwithTrichinellasppoftheOIETerrestrialAnimalHealthCode),providespecificguidanceforcontrolofTrichinellainmeatofSuidaewithpotentialcontrolmeasuresbeingconsideredateachstep,orgroupofsteps,inthefoodchain.TheGuidelinesaresupplementarytoandshouldbeusedinconjunctionwiththeGeneralPrinciplesofFoodHygiene(CAC/RCP1–1969),theCodeofHygienicPracticeforMeat(CAC/RCP58-2005),theCodeofPracticefortheProcessingandHandlingofQuickFrozenFoods(CAC/RCP8-1976),theFAO/WHO/OIEGuidelinesfortheSurveillance,Management,PreventionandControlofTrichinellosis3andtheRecommendationsonMethodsfortheControlofTrichinellainDomesticandWildAnimalsIntendedforHumanConsumptionpreparedbytheInternationalCommissiononTrichinellosis(ICT)StandardsforControlGuidelinesCommittee4.1GuidelinesontheJudgementofEquivalenceSanitaryMeasuresassociatedwithFoodInspectionandCertificationSystems(CAC/GL53-2003)2://://(Chapter2.1.16Trichinellosis).FlexibilityinapplicationisanessentialelementoftheseGuidelines.Theyareprimarilyintendedforusebygovernmentriskmanagersandindustryinthedesignandimplementationoffoodcontrolsystems.TheseGuidelinescouldalsobeusedwhenjudgingtheequivalence5ofdifferentfoodsafetymeasuresformeatofSuidaeindifferentcountriesforinternationaltradepurposes.TheseGuidelinesprovideaframeworkfordecisionsregardingpost-slaughtercontrolmeasurestoprotecthumansfromconsumptionofmeatofSuidaewhichmaybeinfectedwithTrichinellaspp.Pre-harvestpreventativemeasures,prerequisitecriteriaandconditionsforrecognitionofcompartmentsofdomesticpigsasnegligibleriskaredescribedinChapter8.15InfectionwithTrichinellasppoftheOIETerrestrialAnimalHealthCode.4.DEFINITIONSCompartment6meansananimalsubpopulationcontainedinoneormoreestablishmentsunderacommonbiosecuritymanagementsystemwithadistincthealthstatuswithrespecttoaspecificdiseaseorspecificdiseasesforwhichrequiredsurveillance,controlandbiosecuritymeasureshavebeenappliedforthepurposeofinternationaltrade.Crossbreedsmeanstheprogenyofdomesticpigswithnon-domesticatedanimal
