CAC/RCP15Page1of47INTRODUCTIONTheRecommendedInternationalCodeofHygienicPracticeforEggProductswasadoptedbytheCodexAlimentariusCommissionatits11thSessionin1976.Atits12thSessionin1978,theCommissionadoptedMicrobiologicalSpecificationsforPasteurizedEggProducts(AppendixIIoftheCode).In1985,the16thSessionadoptedamendmentstotheCodetoincludemelange.ThisCodeofHygienicPracticeistoberegardedasadvisoryinnatureandindividualgovernmentsshoulddecidewhatusetheywishtomakeoftheCode.TheCommissionhasexpressedtheviewthatcodesofpracticedealingwithspecificcategoriesoffoodsmightprovideusefulchecklistsofrequirementsfornationalenforcementauthorities.RECOMMENDEDINTERNATIONALCODEOFHYGIENICPRACTICEFOREGGPRODUCTSCAC/RCP15-1976(amended1978,1985)1.SECTIONI-SCOPEThisCodeofPracticeisdesignedto:A.Preventdeteriorationinthequalityofeggsinshellintendedforeggproducts.B.Provideguidanceonthehygienicproduction,storage,packagingandtransportofwholeegg,eggalbumen,eggyolkandotherproductsconsistingwhollyormainlyofoneormoreoftheconstituentsofegg,intendedforhumanconsumption.C.Provideguidanceonhygienicpracticerelatingtopremises,equipmentandpersonnelusedorengagedintheproductionoftheseproducts.Unlessspecificallystatedotherwise,thewordEgginthisCoderelatestodomesticatedchickens(hens)eggsintendedforprocessingasabove.However,theprinciplesofthisCodemaybeappliedequallytoeggsofotherdomesticatedbirds.2.SECTIONII-DEFINITIONS.Approvedmeansapprovedbytheofficialagencyhavingjurisdiction..Eggmeanseggs(inshell)ofdomesticatedchickens(hens)..Eggproductsmeansthecontentofeggs,aswholeeggoronlytheyolkoronlyeggalbumenoramixtureofyolkandalbumeninliquid,frozenordriedform,singleorincombinationwithotherfoodsordrinkstoaminimumcontentof50%eggproduct.3.SECTIONIII-RAWMATERIALREQUIREMENTS3.1EnvironmentalSanitationinProductionAreas3.1.1Hygienicdisposalofhumanandanimalwastes.AdequateprecautionsshouldbetakentoensurethathumanandanimalwastesaredisposedofinsuchamannerasnottoconstituteapublichealthorhygienichazardandextremecareshouldbetakentoprotecteggsCAC/RCP15Page2of47fromcontaminationwiththesewastes,particularlythoseeggsthatmaybeconsumedwithoutheattreatment.3.1.2Animal,plantpestanddiseasecontrol.Treatmentwithchemical,biologicalorphysicalagentsshouldbedoneonlyinaccordancewiththerecommendationsoftheofficialagencyhavingjurisdiction;byorunderthedirectsupervisionofpersonnelwithathoroughunderstandingofthehazardsinvolved,includingthepossibilitiesoftoxicresiduesbeingretainedbytheproduct.3.2Production,StorageandCollectionofEggsontheFarm3.2.1Healthoffarmstock.Onlyeggsderivedfromhealthystockshouldbeusedintheproductionofeggproductsforhumanconsumption.3.2.2Equipmentandproductcontainers.Equipmentandeggcontainersshouldnotconstituteahazardtohealth.Containerswhicharere-usedshouldbeofsuchmaterialandconstructionaswillfacilitatethoroughcleaning,andshouldbesocleanedandmaintainedasnottoconstituteasourceofcontaminationtotheproduct.3.2.3Sanitarytechniques3.2.3.1EggsshouldbecollectedasfrequentlyasnecessitatedbytheclimaticconditionsCollectingtwiceadayhasbeenfoundsatisfactory.Theeggsshouldbehandledaslittleaspossible.Inparticular,roughhandlingshouldbeavoided.3.2.3.2Throughouthandlingandstorageitisessentialthatstepsbetakentoprevent:3.2.3.2.1Contaminationoftheshellwithdirt,beddingmaterialsorbyanimals,insects,vermin,birds,chemicalormicrobiologicalcontaminantsorotherobjectionablesubstances.3.2.3.2.2Exposuretounfavourabletemperatures.3.2.3.3Cleaning.Eggsshouldnotbecleanedonthefarm.If,exceptionally,theyarecleanedonthefarm,thisshouldbedoneonlywiththeapprovaloftheofficialagencyhavingjurisdictionwhichshouldbesatisfiedastothemethodofcleaningemployed,includingthetime/temperatureconditionsofanywashingprocessandthedetergents/disinfectantsused.3.2.4Removalofobviouslyunfitmaterials.Unfiteggsshouldbesegregatedduringcollectiontothefullestextentpracticable,andshouldbedisposedofinsuchaplaceandsuchamanneraswillpreventcontaminationofothereggsorwatersupplies.3.2.5Storageonthefarm.Eggsshouldbestoredinacoolroomtowhichtheyshouldbetakenimmediatelyaftercollection.Theyshouldnotbestackedorpackedintoboxesuntiltheyarecool,andtheroomshouldbekeptfreefromstrongsmellingsubstancesandodours.Eggsshouldbestoredatsuchatemperatureandrelativehumidityaswillminimizedeteriorationhavingregardtolocalclimaticconditions.Temperaturesof8o-15oC(46-59oF)andrelativehumiditiesof70%-85%havebeenfoundsatisfactory.Thin-shelledorhair-crackedeggsshouldbecarefullyhandledandpackedinaseparatecontainertopreventbreakagebeforedeliverytothebreakingplant.3.3HandlingIn-shellCrackedEggsontheFarm3.3.1Thin-shelledorhaircrackedeggsorcrackedeggswithshellmembranesintactCAC/RCP15Page3of47shouldbecarefullyhandledandpackedinaseparatecontainertopreventbreakagebeforedeliverytothebreakingplant.3.3.2Ifthereisadangerthatthistypeofeggwillbreakduringthetransporttotheegg-breakingplantsthefollowingprocedureshouldbefollowed.3.3.3Onlycleanhaircrackedeggs(notwashed)orcleancrackedeggs(notwashed)withshellmembranesintactmaybebrokenonthefarm.3.3.4ThisprocedureshouldbeinaccordancewithSection4,Sub-section4.4.4.13.3.5E
