STANDARDFORDEGERMEDMAIZE(CORN)MEALANDMAIZE(CORN)GRITSCXS155-1985Adoptedin1985.Revisedin1995.Amendedin2019.CXS155-198521.SCOPE1.1ThisStandardappliestodegermedmaize(corn)mealandtodegermedmaize(corn)gritsfordirecthumanconsumptionmilledfromkernelsofcommonmaize,ZeamaysL.1.2ThisStandarddoesnotapplytowholemaize(corn)meal,maize(corn)flours,quickgrits,hominygrits,self-risingmaize(corn)meals,enrichedmaize(corn)meals,enrichedmaize(corn)grits,boltedmaize(corn)meals,maize(corn)flakes,andalkalinetreatedmaize(corn)products.1.3ThisStandarddoesnotapplytomaize(corn)mealsforuseasabrewingadjunct,tomaize(corn)mealsusedformanufacturingofstarchandanyindustrialuse,nortomaize(corn)mealforuseasananimalfeed.2.DESCRIPTION2.1Degermedmaize(corn)mealisthefoodpreparedfromfullymature,sound,degermedkernelsofmaize(corn),ZeamaysL.,cleanedfromimpurities,mould,seedsofweedsandothercerealsbyagrindingprocessinwhichthegrainiscomminutedtoasuitabledegreeoffinenessandfromwhichbranandgermareremoved.Initspreparation,coarseparticlesofthegroundmaizekernelmaybeseparated,regroundandrecombinedwithallofthematerialfromwhichtheywereseparated.2.2Degermedmaize(corn)gritsisthefoodpreparedfromfullymature,sound,degermed,kernelsofmaize(corn),ZeamaysL.,cleanedfromimpurities,mould,seedsofweedsandothercereals,byagrindingprocessinwhichthegrainiscomminutedtoasuitabledegreeoffinenessandfromwhichbranandgermarealmostcompletelyremoved.3.ESSENTIALCOMPOSITIONANDQUALITYFACTORS3.1Qualityfactors–general3.1.1Degermedmaizemealanddegermedmaizegritsshallbesafeandsuitableforhumanconsumption.3.1.2Degermedmaizemealanddegermedmaizegritsshallbefreefromabnormalflavours,odours,andlivinginsects.3.1.3Degermedmaizemealanddegermedmaizegritsshallbefreefromfilth(impuritiesofanimalorigin,includingdeadinsects)inamountswhichmayrepresentahazardtohumanhealth.3.2Qualityfactors–specific3.2.1Moisturecontent15.0%m/mmaxLowermoisturelimitsshouldberequiredforcertaindestinationsinrelationtotheclimate,durationoftransportandstorage.4.CONTAMINANTS4.1HeavymetalsDegermedmaize(corn)mealandmaize(corn)gritsshallbefreefromheavymetalsinamountswhichmayrepresentahazardtohumanhealth.4.2PesticideresiduesDegermedmaize(corn)mealandmaize(corn)gritsshallcomplywiththosemaximumresiduelimitsestablishedbytheCodexAlimentariusCommissionforthiscommodity.4.3MycotoxinsDegermedmaize(corn)mealandmaize(corn)gritsshallcomplywiththosemaximummycotoxinlimitsestablishedbytheCodexAlimentariusCommissionforthiscommodity.5.HYGIENE5.1ItisrecommendedthattheproductcoveredbytheprovisionsofthisstandardbepreparedandhandledinaccordancewiththeappropriatesectionsoftheGeneralPrinciplesofFoodHygiene(CXC1-1969)andotherCodesofPracticerecommendedbytheCodexAlimentariusCommissionwhicharerelevanttothisproduct.5.2Totheextentpossibleingoodmanufacturingpractice,theproductshallbefreefromobjectionablematter.CXS155-198535.3Whentestedbyappropriatemethodsofsamplingandexamination,theproduct:–shallbefreefrommicro-organismsinamountswhichmayrepresentahazardtohealth;–shallbefreefromparasiteswhichmayrepresentahazardtohealth;and–shallnotcontainanysubstanceoriginatingfrommicro-organismsinamountswhichmayrepresentahazardtohealth.6.PACKAGING6.1Degermedmaize(corn)mealandmaize(corn)gritsshallbepackagedincontainerswhichwillsafeguardthehygienic,nutritional,technological,andorganolepticqualitiesoftheproduct.6.2Thecontainers,includingpackagingmaterial,shallbemadeofsubstanceswhicharesafeandsuitablefortheirintendeduse.Theyshouldnotimpartanytoxicsubstanceorundesirableodourorflavourtotheproduct.6.3Whentheproductispackagedinsacks,thesemustbeclean,sturdyandstronglysewnorsealed.7.LABELLINGInadditiontotherequirementsoftheGeneralStandardfortheLabellingofPrepackagedFoods(CXS1-1985),thefollowingspecificprovisionsapply:7.1NameoftheproductThenameoftheproducttobeshownonthelabelshallbe“degermedmaize(corn)meal”,or“maize(corn)grits”.7.2Labellingofnon-retailcontainersInformationfornon-retailcontainersshalleitherbegivenonthecontainerorinaccompanyingdocuments,exceptthatthenameoftheproduct,lotidentificationandthenameandaddressofthemanufacturerorpackershallappearonthecontainer.However,lotidentificationandthenameandaddressofthemanufacturerorpackermaybereplacedbyanidentificationmark,providedthatsuchamarkisclearlyidentifiablewiththeaccompanyingdocuments.8.METHODSOFANALYSISANDSAMPLINGSeerelevantCodextextsonmethodsofanalysisandsampling.CXS155-19854ANNEXInthoseinstanceswheremorethanonefactorlimitand/ormethodofanalysisisgivenwestronglyrecommendthatusersspecifytheappropriatelimitandmethodofanalysis.Factor/DescriptionLimitMethodofanalysisASHMAX:1.0%onadryweightbasisAOAC923.03ISO2171:1980ICCMethodNo.104/1(1990)PROTEIN(Nx6.25)MIN:7.0%onadryweightbasisICC105/lMethodfortheDeterminationofCrudeProteininCerealsandCerealProductsforFoodandforFeed(TypeI)Selenium/Coppercatalyst–or–ISO1871:1975CRUDEFATMAX:2.25%onadryweightbasisAOAC945.38F;920.39CISO5986:1983GRANULARITYdegermedmaizemeal95%ormoreshallpassthrougha0.85sieve;–and–45%ormoreshallpassthrougha0.71mmsieve;–and–25%orlessshallpassthrougha0.210sieveAOAC965.22(TypeImethodwithsi
